What you need 👇
- 2 pieces of White Fish of your choice (250g)
- 1 bunch Asian greens (200g)
- 1 tsp Chilli, crushedÂ
- 1/4 tsp Ginger, minced
- 1 tsp Coconut Sugar
- 1/4 tsp Salt
- 2 tsp Coconut Oil
- 250g Coconut Rice (Pre-Cooked)
How to make 👇
1. Wash and chop Asian greens.
2. Heat half the oil over medium-high heat in a large non-stick fry pan.
3. Sauté Asian greens for 5-6 minutes, stirring occasionally. Set aside covered to keep warm.
4. Mix crushed chilli, minced ginger, salt and coconut sugar in a small bowl. Spread half over one side of the fish.
5. Heat the remaining oil in the fry pan.
6. Pan fry the fish (marinaded side down) for 3-5 minutes (depending on thickness of fish).
7. Spoon the remaining chilli mixture over the fish and flip, cooking on the other side for 3-5 minutes until fish is cooked through.
8. Cook coconut rice as per packet instructions (e.g. microwave for 90 seconds).
9. Divide rice between bowls, top with Asian greens, fish and squeeze lime juice over.
