Anzac Biscuits

Dairy free
Ingredients:
- 1.5 cups (175g) rolled oats
- ½ cup (50g) desiccated coconut
- ½ cup (60g) almond meal
- ¼ tsp baking soda
- 3 tbls (75g) runny honey
- 4 tbls (60mL) extra virgin olive oil
- 1 tsp vanilla extract
- 1 tbls water
Method:
- Preheat oven to 160 degrees Celsius. Line a baking tray with baking paper.
- Add oats, coconut, almond meal and baking soda into a food processor.
- Whisk honey, oil, vanilla and water in a small bowl. Pour into food processor.
- Blitz until just combined and sticky, approx. 15 seconds.
- Form 16 small balls and place onto baking tray. Flatten down with the back of a spoon.
- Bake for 16-18 minutes until golden.
- Allow to cool completely on a cooling rack.
Tips: Be careful not to over process the mixture. For vegan, swap honey for rice malt syrup or golden syrup.
