A nourishing, no-bake snack that feels like a treat! These Salted Date Caramel Balls are rich, satisfying, and full of whole-food ingredients. Perfect for a mid-afternoon pick-me-up or something sweet after dinner.
They’re super simple to make, freezer-friendly, and a total hit in our household. Keep a stash in the freezer for when the 3pm cravings hit. You’ll thank yourself later!
Prep + Cook Time: 20 minutes
Makes: 15 balls
Ingredients
- 310 g fresh dates, pitted
- 150 g coconut oil
- 25 g cacao powder
- 1 tsp vanilla extract
- 2 tbsp extra coconut oil (at room temperature)
- ½ tsp sea salt flakes
- 50 g coconut flour
Method
- Place dates in a medium bowl and cover with boiling water. Let sit for 10 minutes to soften, then drain and discard the water.
- In a small bowl, mix the melted coconut oil and sifted cacao powder. Set aside to slightly thicken.
- In a food processor, blend the softened dates, vanilla extract, extra coconut oil, and sea salt until smooth.
- Transfer the mixture to a bowl, cover, and freeze for 30 minutes or until firm.
- Line a tray with baking paper.
- With damp hands, roll tablespoons of the mixture into balls.
- Roll each ball in coconut flour, then coat in the cacao mixture.
- Place on the tray, sprinkle with extra sea salt flakes, and freeze for 10 minutes or until set.
