Creamy Chicken Quinoa Risotto

Our Chicken Quinoa Risotto has been a quiet favourite in THE BOD kitchen for years. Ingredients

Serves 4

  • 1 tbsp Coconut Oil
  • 1 cup Mushrooms, finely sliced
  • ¼ Brown Onion, finely sliced
  • Pinch of Cinnamon
  • 1 Chicken Breast, cut into strips
  • 1 cup White Quinoa
  • 1 cup Light Coconut Cream
  • 1 cup Water

Method

  1. Finely slice the onion and mushrooms.
  2. On a clean chopping board, cut the chicken breast into strips.
  3. In a deep pan, heat coconut oil and sauté the onions, mushrooms, and cinnamon until soft and fragrant.
  4. Add chicken strips and quickly brown them. Don’t cook all the way through.
  5. Pour in the coconut cream, water, and quinoa. Stir to combine.
  6. Lower the heat, cover the pan with a lid, and let it simmer until the quinoa is cooked and most of the liquid has evaporated. Avoid lifting the lid too often.

Bod Tips

  • Want to bulk it out? Throw in a handful of baby spinach in the last few minutes of cooking.
  • No coconut cream? You can swap for cream, a splash of almond milk or Greek yoghurt (just reduce water slightly).
  • Make it vegetarian: Sub the chicken for chickpeas or tempeh and use veggie stock instead of water.
