What you need 👇
- 250g Medium Prawns
- 1 Clove Garlic, finely chopped
- 1 tsp coconut oil
- 80g Sweet Potato Noodles or Vermicelli Noodles
- 1 tbs roasted peanuts
- 1/4 cup coriander
- 1 spring onion, sliced
- 1/2 medium carrot, sliced into matchsticks
- 12 snow peas, sliced into matchsticks
- 1/4 large cucumber, sliced into matchsticks
- 100g bean shoots
For the Dressing:
- 1 tsp tamari
- 1 tbs coconut sugar
- 2 tbs rice wine vinegar
- 2 tbs fish sauce
- 1/4 tsp red chilli, finely diced
- 1 clove garlic, finely diced
How to make 👇
1. Chop capsicum, snow peas, cucumber, carrot into matchsticks; slice spring onion; chop mint and coriander, and set aside.
2. Combine dressing ingredients – finely diced garlic and chilli, fish sauce, rice wine vinegar, coconut sugar and tamari.
3. Boil a saucepan of water and boil noodles for 8 minutes (or as per packet instructions). Drain.
4. Heat oil in a non-stick frypan. Add prawns and garlic. Stir fry for 6-8 minutes until cooked through.
5. Divide noodles, vegetables, herbs and prawns between 2 bowls. Pour dressing over and toss to combine. Top with spring onion and peanuts.
Tips: Sweet potato noodles can be found in the Asian aisle of supermarkets. Alternatively use brown rice vermicelli noodles for the same macros.
