Healthy Dinner Recipe | Chicken With Zucchini & Salsa Verde

Need a quick, healthy dinner with an added protein boost? This nutritious and delicious chicken dish is always an easy family winner, plus it packs a whopping 42g protein punch per serve! 💪

What you need 👇

  • 4 chicken breast fillets 
  • 2 tsp olive oil
  • 5 medium zucchini
  • 1/4 cup flaked almonds, toasted
  • 100g low-fat ricotta
  • 1/4 cup parsley

For the Salsa:

  • 1/2 cup parsley
  • 1/4 cup basil
  • 1 clove garlic
  • 2 tsp capers
  • 1 tsp dijon mustard
  • 1/4 cup olive oil
  • 2 tsp red wine vinegar

How to make 👇
1. Season chicken. Heat oil in a large frying pan and cook chicken until cooked through. Cover to keep warm.
2. Using a vegetable spirals, cut the zucchini into thick noodles.
3. Combine salsa verde ingredients. Combine zucchini with 2/3 of the salsa and season.
4. Serve chicken and zucchini topped with remaining salsa, almonds, ricotta and parsley.
