What you need 👇
- 4 chicken breast filletsÂ
- 2 tsp olive oil
- 5 medium zucchini
- 1/4 cup flaked almonds, toasted
- 100g low-fat ricotta
- 1/4 cup parsley
For the Salsa:
- 1/2 cup parsley
- 1/4 cup basil
- 1 clove garlic
- 2 tsp capers
- 1 tsp dijon mustard
- 1/4 cup olive oil
- 2 tsp red wine vinegar
How to make 👇
1. Season chicken. Heat oil in a large frying pan and cook chicken until cooked through. Cover to keep warm.
2. Using a vegetable spirals, cut the zucchini into thick noodles.
3. Combine salsa verde ingredients. Combine zucchini with 2/3 of the salsa and season.
4. Serve chicken and zucchini topped with remaining salsa, almonds, ricotta and parsley.
