We couldn't skip halloween without a cheeky PUMPKIN themed recipe!
Snacks are a great way to keep your energy levels up throughout the day, improve your productivity, keep you mentally sharp, and help you keep on track with your health and fitness goals. The important thing to remember when you’re feeling peckish is to make smart choices when it comes to snacks.
Here's the recipe:
Pumpkin Choc Chip Muffins
Serves 12
Cals: 129 Protein: 3.8g Carbs: 12.6g Fats: 7g
Ingredients:
- 2 tbsp honey (30g)
- 1 cup pumpkin puree (225g)
- 1/4 cup extra virgin olive oil
- 2 large eggs
- 1/4 cup unsweetened almond milk (60ml)
- 1 tsp vanilla extract (5ml)
- 1 1/4 cup spelt flour (150g)
- 1/4 cup stevia or monk fruit sweetener (35g)
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup chocolate chips
Method:
- Preheat oven to 180 degrees celsius
- Line a muffin tray or lightly spray with oil
- Combine dry ingredients in a bowl (except choc chips)
- In a seperate bowl, whisk wet ingredients
- Pour wet ingredients into dry ingredients and combine. Fold in choc chips.
- Divide evenly between 12 muffin cups
- Bake 22-25 minutes or until tester comes out clean.
TIP: For gluten free, use a GF all-purpose flour or buckwheat flour. If you can't get pumpkin puree, steam pumpkin until soft and mash with a fork
