Vietnamese Prawn Noodle Salad | FREE Recipe

Need a quick, healthy dinner with an added protein boost? This nutritious and delicious prawn dish is always a winner, plus it packs a whopping 34g protein punch per serve! 💪


What you need 👇


  • 250g Medium Prawns
  • 1 Clove Garlic, finely chopped
  • 1 tsp coconut oil
  • 80g Sweet Potato Noodles or Vermicelli Noodles
  • 1 tbs roasted peanuts
  • 1/4 cup coriander
  • 1 spring onion, sliced
  • 1/2 medium carrot, sliced into matchsticks
  • 12 snow peas, sliced into matchsticks
  • 1/4 large cucumber, sliced into matchsticks
  • 100g bean shoots


For the Dressing:


  • 1 tsp tamari
  • 1 tbs coconut sugar
  • 2 tbs rice wine vinegar
  • 2 tbs fish sauce
  • 1/4 tsp red chilli, finely diced
  • 1 clove garlic, finely diced


How to make 👇
1. Chop capsicum, snow peas, cucumber, carrot into matchsticks; slice spring onion; chop mint and coriander, and set aside.
2. Combine dressing ingredients – finely diced garlic and chilli, fish sauce, rice wine vinegar, coconut sugar and tamari.
3. Boil a saucepan of water and boil noodles for 8 minutes (or as per packet instructions). Drain.
4. Heat oil in a non-stick frypan. Add prawns and garlic. Stir fry for 6-8 minutes until cooked through.
5. Divide noodles, vegetables, herbs and prawns between 2 bowls. Pour dressing over and toss to combine. Top with spring onion and peanuts.
Tips: Sweet potato noodles can be found in the Asian aisle of supermarkets. Alternatively use brown rice vermicelli noodles for the same macros.
